My favorite summer cocktail is the Mojito. It’s such a refreshing thirst quencher! I enjoy making it at home cause I can control the alcohol amount and everything else that goes in.
Here is another delicious way to flavor up that plain ol’ mojito – with watermelon! It’s a super easy recipe, you just add ripe, juicy watermelon to the regular mojito recipe. Simply delicious and very tropical… a perfect drink to enjoy poolside or at the beach. The aroma of watermelon mixing with the mint & lime is absolutely heavenly! Even great without the rum!
I didn’t have to add much ice to mine since the watermelon was already chilled. Oops, I forgot to garnish with a watermelon wedge.
Here is a quick & easy watermelon mojito recipe that you’ll indulge in throughout the summer.
8 1-inch seedless watermelon cubes
2 lime wedges (or lime juice)
2 tsp. powdered Sugar or simple syrup
8 to 10 fresh mint leaves (I like it minty!)
2 oz. light rum
Club soda (mmmmm, fizzy!)
Put lime wedges, sugar and mint leaves into a durable mixing glass. Use a muddler to crush the mint and lime until sugar is dissolved. Add watermelon and mesh until most of the juice is out! Put ice into the glass, and add rum (optional). Pour into cocktail shaker and shake vigorously. Strain mixture into a glass filled with ice. Top with club soda, garnish with a couple of mint sprigs and a small watermelon wedge and serve immediately to get the Brrrrrrrrr effect!
