This cherry tomato herb salad is the perfect summer salad. Store in the refrigerator until it’s cold. Not only is it so yummy but will be very refreshing. Oh, and it will make you one healthy chick!
2 cups of cherry tomatoes, onion quartered
3 tbs of extra virgin olive oil, 1 tbs of lemon juice(real lemon juice even better), 1tsp dried basil, 1/2 tbs dried parsley, salt & pepper to taste
Here are the ingredients.
Cross-cut the top of each tomato. A serrated knife works the best.
Put the tomatoes in boiling water so the skin starts to peel
but make sure they don’t turn too mushy!
Drain the water and they will look like this…
Add the peeled tomatoes, chopped onions, basil and parsley flakes, olive oil in a large bowl.
Salt & pepper to taste. (you can substitute dried herbs with fresh herbs which is even better)
Stir up all the ingredients and store in the refrigerator until chilled.
This gives enough time for proper marination.
Salt brings out the water as it sits. Yummy!
